Black Bean Chicken Enchiladas

Sauce:
1 c sour cream
1 can (10.5 oz) cream of chicken soup
1/2 c pepperjack cheese, shredded
juice from canned tomatoes and chilies

Mix in separate bowl:
2 c cooked chicken, shredded
1 can (14.5 oz) diced tomatoes, drained
1 can (14.5 oz) chilies, drained
1 can (15 oz) black beans, drained and rinsed

Spread a spoonful of sauce on bottom of pan, fill tortilla (I use corn) and roll up. then place in pan. Once all enchiladas are in pan top with remaining sauce and desired amount of cheese.

Perfect Dinner Rolls

1 lg can evaporated milk
1/3 c sugar
1 T salt
1 c boiling water
2 beaten eggs
2 T yeast in 1/3 c warm water

Add 2 c whole wheat flour and enough white flour to pull dough from sides of bowl (4-41/2c) Beat 5 minutes. Pour into greased bowl, let rise. Fix into desired shapes. Let rise again.

Bake 375 for 15 minutes.

Banana Bread

I have tried MANY banana bread recipes and after tweaking things and doing it my way I have found this recipe to be the best.

3-4 bananas, mashed
2 eggs
1/2 c oil
2 c flour
1 c sugar
1 t baking soda
1/2 t salt

Pour into greased pan.

Bake at 350 for about 45 minutes.

Peach Pie

5 C Peaches, peeled and sliced
2 T Lemon Juice
1/2 C Flour
1 C Sugar
1/2 t Cinnamon
1/4 t Nutmeg
1/4 t Salt

Toss peaches in lemon juice. Set aside. Mix flour, sugar, cinnamon, nutmeg and salt together. Mix peaches in with the mixture. Pour into pie crust.

Bake 450 for 10 minutes then turn down to 350 for 30 minutes.

Chicken Cordon Blue

2T Oil
1 Onion, chopped
1 Bell Pepper, chopped
1 Garlic Clove
1/2 lb Ham, diced
2C Chicken, shredded
3C Rice, cooked

4T Butter
1/4C FLour
Salt
Pepper
14 oz Chicken Broth

Pepperjack Cheese, shredded

Saute in oil, onion and bell pepper. Stir in garlic, ham & chicken Cook 5 minutes. In another pan melt butter, stir in flour, salt & pepper. Stir in broth. Then mix in rice. Mix all together. Transfer to a pan. Top with cheese.

Bake 350 20-25 minutes.

Carianne's Lasagna

1 lg container cottage cheese (I use the one from Costco)
2 containers ricotta cheese
grated parmessan
shredded pepper jack or mozzerella (I like the pepper jack, gives it a little kick)
garlic
pepper
2 eggs
Meat Sauce (I use 2lb ground beef seasoned with garlic and pepper and Prego sauce)
No Bake Lasagna Noodles

Prepare your meat sauce.

Add cottage cheese, ricotta cheese, parmessan cheese, garlic, pepper and eggs and mix thoroughly.

Pour some sauce in your dish and cover the bottom. Spoon cheese mixture on top of noodles then place in pan. Pour sauce over the top then top with cheese. Repeat 'til you only have 3 noodles left for the top. Place noodles on top cover with sauce and cheese. Cover with foil and bake for 30 minutes. Remove foil and bake 'til cheese is all melted. Remove from oven and let it cool.

Perry Chicken Mole

Perry's don't measure. Or at least my mother in law and I don't so I am sorry. We just kind of add things 'til we think it's right. This is very easy and so yummy!

Boil Chicken w boullion, onion, garlic and bell pepper.

Remove Chicken

Put mole sauce in blender with part of the chicken broth and 10 Maria Cookies
(1 can mole sauce=10 Maria Cookies)

Blend until smooth

Pour back into pan with remaining broth

Boil

Add chicken back into pan

Slow cook on low heat

Allred Fudge Sauce

1/4 lb butter
4 T cocoa
2 cup sugar
1/2 t salt
1 lg can milk

Melt butter and cocoa on low heat, stirring constantly. Then add sugar and salt gradually. Slowly add milk and cook until dissolved and warm.

Makes 1 quart. Store in refrigerator in covered container.

Cheese Fudge

Yes...I said CHEESE!!! I am sure you are gagging but this truly is the BEST fudge recipe I have ever eaten. Super easy too. It is my families recipe and you won't be disappointed, I promise.

1 lb butter
1 lb Velveeta Cheese
4 lbs powdered sugar
1 Cup Cocoa
1 t vanilla

Melt butter and cheese in saucepan on low. Stir constantly. Sift together sugar and cocoa. Stir in cheese mixture. Add vanilla. Mix well and spread evenly in cookie sheet that has been sprayed with pam. Cool and cut into pieces. Refrigerate.

Makes about 6 1/2 lbs.

Italian Baked Chicken

3/4 Cup Mayonaise
1/2 Cup Grated Parmessan
Garlic (as much as you like...we love garlic)
Italian Bread Crumbs
Chicken Breasts

Preheat oven to 425

Mix mayo, parmessan and garlic in a bowl. Rinse chicken and slather in mayo mix. Then dip in bread crumbs. Place in pan and bake for 20 minutes.

Breakfast Sausage Casserole

1 pd sausage
frozen hash browns
26 oz can of Cream of Mushroom Soup
4 oz can of Diced Green Chilies
Shredded Pepper Jack Cheese
14 eggs

Cook sausage. Drain fat. Mix sausage with cream of mushroom soup and green chilies. Pour frozen hash browns into 9x13 pan about an inch deep. Pour sausage mixture over top. Sprinkle with pepper jack cheese. Whisk eggs in seprate bowl then pour over cheese. Top with remaining cheese. Bake 350 degrees.

Fruit Salad...Yummy Yummy!!!

Fruit Salad
1 pkg instant Vanilla pudding (follow directions on box)
8 oz cool whip
1 can crushed pineapple

Make pudding (as per box instructions) then fold in cool whip and pineapple.
Add whatever fruit you would like.

I used bananas, then a bag of frozen sliced strawberries and frozen peaches cut up into bite sized pieces. I thought I had mandarin oranges but nope. If I would have had fresh fruit I would have used it, but the frozen was just fine. You couldn't tell. It was so yummy. Of course I doubled this recipe cause my family LOVES fruit. I made it earlier in the day and then put it in the fridge.

Fresh Summer Chicken Over Pasta

Fresh Summer Chicken Over Pasta

Chicken Breasts
EVOO~Extra Virgin Olive Oil
Salt & Pepper
Butter
Garlic
Mexican Squash
Zucchini
Red & Yellow Peppers
Vermicelli (or other pasta)

Wash Chicken (see how under cooking tips)
Cut up into bite size pieces
In heated pan add EVOO
Add fresh minced garlic cloves (as many as you like)
Add chicken to pan
Season with salt and pepper
Squeeze a lemon/lime over chicken
Cover pan and let chicken cook
Cut up Mexican Squash, Zucchini, Bell Peppers (red & yellow)
When chicken is cooked add vegetables and recover pan
In another pan bring water to boil and cook vermicelli (or whatever pasta you like)
Rinse Pasta when finished cooking
Toss Pasta with butter, salt and pepper
Put chicken and veggies over pasta and top with cotija

Washing Chicken

I learned from my Mother in Law (who is from Mexico) to wash your chicken with Lemon Juice (or Lime if that's all you have) She says that it disinfects the chicken. Here are the steps:

1. Roll lemon on counter
2. Cut lemon in half
3. Rinse chicken in water
4. Squeeze lemon over chicken
5. Rub chicken with lemon
6. Rinse lemon again with water

Sometimes I let it sit in the lemon juice for a bit. If I want my chicken to marinate in lemon after I have washed it, I squeeze a fresh lemon over it and let it marinate.

BBQ Montreal Chicken over Pasta

BBQ Montreal Chicken over Pasta

Chicken Breasts
Juice of Lime/Lemon
Montreal Chicken Seasoning
Egg Noodles
Chicken Bouillon
Butter
Salt & Pepper


Wash chicken with water and lemon.
Marinate Chicken Breasts in lime (or Lemon) juice and Montreal Chicken Seasoning.
BBQ Chicken (use leftover juices in pan to pour over chicken while BBQ-ing so it doesn't get dry.

Boil water and chicken bouillon.
Cook Egg Noodles (or whatever noodles you'd like)
Drain noodles (do not rinse)
Add desired amount of butter, salt and pepper

When chicken is done, cut up chicken.
Put pasta on plate and put cut up chicken pieces over top.
Sprinkle with cotija.

Served with Green Beans and salad.
